Pumpkin is a very nutritious vegetable. Pumpkin soup is a great regular dish I’ve added to my diet to help with fat loss and improving my overall health. This is a very simple one pot recipe I’ve fudged together. There are many great recipes out there. This one is focussed on simplicity of ingredients, quick and easy to prep and quick to clean up.
Ingredients:
- Pumpkin
- Carrots x2
- Garlic
- Brown Onion x1
- Butter
- Chicken Stock 1L
- Turmeric 1 Tsp
- Paprika 1 Tsp
- Cinnamon (or Nutmeg) .5 Tsp
- Salt & Pepper
- Fresh Herbs
- Fatty Milk or Cream

Method:
- Get a large pot and place on heat
- Place 2 teaspoons of butter in the pot
- Dice onion & garlic and place in the pot
- Keep stirring so the onion doesn’t burn
- Peel & dice the pumpkin
- Slice the carrot
- Place pumpkin & carrot into the pot & stir well
- Place enough stock in the pot to cover the pumpkin & carrot
- Simmer for about 30 minutes or until pumpkin is soft
- Use a stick blender to puree the pumpkin & other contents until there are no large chunks left
- Add 1 teaspoon of turmeric, paprika
- Add a pinch of cinnamon or nutmeg to flavour
- Add in fresh herbs such as parsley & coriander
- Add salt & pepper to flavour
- Serve in a bowl
- Add cream or fatty milk and stir in, if desired.
