Very Simple, One Pot, Pumpkin Soup Recipe

Pumpkin is a very nutritious vegetablePumpkin soup is a great regular dish I’ve added to my diet to help with fat loss and improving my overall health.  This is a very simple one pot recipe I’ve fudged together.  There are many great recipes out there.  This one is focussed on simplicity of ingredients, quick and easy to prep and quick to clean up.

Ingredients:

  • Pumpkin
  • Carrots x2
  • Garlic
  • Brown Onion x1
  • Butter
  • Chicken Stock 1L
  • Turmeric 1 Tsp
  • Paprika 1 Tsp
  • Cinnamon (or Nutmeg) .5 Tsp
  • Salt & Pepper
  • Fresh Herbs
  • Fatty Milk or Cream

Method:

  1. Get a large pot and place on heat
  2. Place 2 teaspoons of butter in the pot
  3. Dice onion & garlic and place in the pot
  4. Keep stirring so the onion doesn’t burn
  5. Peel & dice the pumpkin
  6. Slice the carrot
  7. Place pumpkin & carrot into the pot & stir well
  8. Place enough stock in the pot to cover the pumpkin & carrot
  9. Simmer for about 30 minutes or until pumpkin is soft
  10. Use a stick blender to puree the pumpkin & other contents until there are no large chunks left
  11. Add 1 teaspoon of turmeric, paprika
  12. Add a pinch of cinnamon or nutmeg to flavour
  13. Add in fresh herbs such as parsley & coriander
  14. Add salt & pepper to flavour
  15. Serve in a bowl
  16. Add cream or fatty milk and stir in, if desired.
